Empress Cherry, Walnut and Goat Cheese Salad

Serves 6

 

Salad Ingredients

1/2 cup walnuts, chopped and toasted

1 cup dried cherries

2 medium granny smith apples

4 cups mixed field greens

10-ounce goat cheese log sliced at room temp.

 

Dressing

2 tablespoons cider vinegar

1 tablespoon Dijon mustard

1 teaspoon shallots, minced

1/4 teaspoon salt

1/4 teaspoon sugar

6 tablespoons olive oil

 

Plump cherries in a small bowl of hot water for ten minutes; drain. Quarter and core apples, and cut into 1/8 inch slices.

 

Combine vinegar, mustard, shallot, salt, and sugar in a bowl. Whisking constantly, drizzle in oil; season to taste with pepper. Place greens in large bowl and toss in dressing. Divide the greens on individual plates, Sprinkle with walnuts, cherries, apples and goat cheese.
