Makes 6 toasts

 

6 slices of bread

butter

4 ounces goat cheese, room temperature

2 tablespoons of mayonnaise

cucumber, sliced thin

assorted snipped herbs and chives

salt and pepper to taste

 

Toast bread on each side in a pan with a bit of butter.

Combine goat cheese and mayonnaise.

Add snipped herbs to cheese, reserving some.

Spread goat cheese mixture on toasts.

Arrange cucumbers on top of cheese.

Sprinkle with remaining herbs and salt and pepper to taste.
