Makes One

Ingredients

1 tablespoon mayonnaise

1 teaspoon Dijon mustard

1 tablespoon butter

2 slices thick sandwich bread

1/2 cup shredded or sliced Gruyere cheese

4 slices good ham

1 egg

salt and pepper

 

Mix mayo and mustard.

Melt butter on low flame in nonstick pan.

Assemble sandwich by spreading half mayo/mustard spread on each slice of bread, stuff with ham and cheese and place in pan with foaming butter.

Cook on low flame until toasted on each side.

Remove from pan, increase heat and crack egg into pan.

Fry egg until whites are set and yoke still runny, about 3 minutes.

Slide egg on top of toasted sandwich.
